My Long-Awaited Florida Adventure: From Dream to Reality

For as long as I can remember, I’ve yearned to visit Florida, especially the captivating Keys. During my high school years, it seemed everyone else was off to Florida for spring break, while I could only dream. My parents’ divorce meant lavish family vacations were simply out of reach. Watching my classmates return, beautifully tanned and utterly relaxed, fueled a quiet vow within me: one day, Florida would be proudly checked off my bucket list.

Cinderella's Castle at Disney World, Orlando, a magical landmarkThat dream finally materialized thanks to an incredible opportunity. You might recall my earlier post about Food Blog Forum, a vibrant food blogging conference I attended in March. Through the immense generosity of Disney World and a host of other wonderful sponsors, I was at last able to make my very first trip to Florida. It was a moment I’d anticipated for decades, and it exceeded every expectation.

Heartfelt Hospitality: Staying with Friends in the Sunshine State

Beyond the conference, I owe a massive thank you to another special person: my dear friend Jodi. She graciously opened her home and her heart to my entire family – all seven of us! After the bustling conference, we piled into our rental van and embarked on a scenic 3.5-hour drive to Jodi’s place, where we enjoyed two more blissful nights. It was truly amazing to finally meet Jodi in person. We’d been working together online for over four years, sharing many laughs and stories, and our professional connection had blossomed into a cherished friendship. Meeting her and her family was an absolute highlight of the trip.

As you can see from the photos, my energetic kids quickly made themselves at home, playfully taking over Jodi’s living room. Jodi’s incredible hospitality meant we had precious extra time to explore and relax before our journey back to Wisconsin. This extended stay allowed us to truly soak in more of Florida’s charm and create lasting family memories.

Upon our arrival, Jodi and her husband Mike immediately welcomed us with a delicious meal. It was a wonderful gesture, especially considering our large group!

Feeding all of us was quite a feat, and we were so grateful for their generosity and the warm, lively atmosphere.

The rest of that memorable evening was spent unwinding in the backyard, admiring the peaceful canal running behind their home, and simply cherishing the time spent with cherished friends. It was the perfect blend of relaxation and camaraderie.

And speaking of unique, did I mention that Jodi is the proud caretaker of Muscovy Ducks? Their story is quite remarkable, and it’s the inspiration behind her blog, aptly named My Muscovy Ducks Tale. Her blog beautifully recounts how the humane society initially advised freezing abandoned eggs, believing they wouldn’t survive without their mother. Jodi, with her unwavering determination and compassion, proved them wonderfully wrong! It’s a heartwarming narrative of resilience and triumph, with nothing but happy endings. It truly showcases her caring spirit.

Exploring Key Largo: A Slice of Paradise

Jodi’s generosity in opening her home brought us within easy reach of Key Largo, a mere hour’s drive away. Had it not been for her, our Florida adventure would have concluded in Orlando, and we would have missed out on experiencing another facet of Florida’s breathtaking natural beauty. This unexpected extension to our trip allowed us to delve deeper into the wonders of the Keys.

Our first stop in Key Largo was an unforgettable ride on a glass-bottom boat. While the video I captured was a bit noisy from the whipping wind and slightly shaky from the gentle bumps on the water, it was truly a magnificent day. The vibrant underwater world unfolded beneath us, a kaleidoscope of colorful fish and intricate coral reefs. It was an absolutely fabulous experience, and simply being out on the vast, beautiful ocean was outstanding.

Instead, we opted for a scenic drive, eager to discover what other hidden gems Key Largo had in store for us. Unfortunately, time constraints prevented us from driving all the way down the entire length of The Keys – a journey we’ve now earmarked for a future visit. However, our drive led us to a delightful discovery: a small, unassuming parking lot, barely large enough for six cars, leading to a place simply called “Annie’s Beach.”

Annie's Beach, a tranquil spot in Key Largo, Florida

If you’ve ever embarked on the scenic drive from Key Largo towards the southernmost Keys, you’ll know it’s a unique landscape: ocean on both sides, with just a narrow strip of land in between. Finding an empty parking spot is a rare treat, so we quickly seized the opportunity to explore Annie’s Beach!

A charming wooden boardwalk wound its way through the lush vegetation, stretching further than the eye could see, inviting us to discover what lay beyond.

Along this enchanting path, we found several inviting entrances leading directly to the water, beckoning us closer to the serene shoreline.

Each path led to a view more beautiful than the last, culminating in breathtaking vistas of the crystal-clear waters and tranquil surroundings. It was a truly idyllic spot, a quintessential slice of Floridian paradise.

I yearned to stay in that idyllic setting forever, but reality, and the view of Chicago from my airplane window, eventually brought me back. Goodbye, Florida, until we meet again! Especially now that I know I have a wonderful place to crash. 😉

Bringing Florida Home: The Key West Grilled Chicken Salad Recipe

A vibrant Key West Grilled Chicken Salad, ready to be enjoyed

Even though I’m back in the Midwest, I can easily drift back to the sun-drenched shores of Florida by preparing this exquisite grilled chicken salad. It’s brimming with the sweet tang of mandarin oranges, the satisfying crunch of cashews, the chewy texture of dried tropical fruits, and of course, perfectly marinated grilled chicken. The secret to the chicken’s exceptional flavor comes from this fantastic Key West Grilled Chicken marinade recipe from Grocery Budget 101. It’s truly delicious, though I found that a longer marination time significantly deepens the flavor. A helpful tip for maximizing flavor absorption: gently pierce the chicken breasts a few times with a fork before they soak in the marinade.

When it comes to dressing, I’m not one for heavy, overpowering sauces. A light drizzle is usually all I need to complement the natural flavors of a salad. For this particular Key West Grilled Chicken Salad, I discovered a delightful dressing at my local market that perfectly enhanced its tropical profile. Look for a light vinaigrette with citrus notes, or even a honey-lime dressing, to complete this incredible dish. The goal is to highlight, not overwhelm, the fresh ingredients.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
