Why These Mississippi Pot Roast Sliders Are a Must-Try
These Mississippi Pot Roast Sliders are undeniably my absolute favorite way to utilize leftover pot roast, though they are equally fantastic when made with freshly prepared meat. This recipe was inspired by our incredibly popular Instant Pot Mississippi Pot Roast, guaranteeing a rich depth of flavor and unparalleled tenderness. The magic truly happens when the savory, pull-apart chuck roast, infused with its signature tangy, spicy, and buttery notes, is combined with melted cheese and those sweet, soft Hawaiian rolls.
The beauty of the Mississippi pot roast lies in its simplicity and the incredible depth of flavor it develops. Whether slow-cooked or made quickly in a pressure cooker, the meat becomes fall-apart tender, absorbing all the delicious juices. Transforming this into sliders means you get all that complex flavor in a convenient, handheld form, perfect for sharing. The slight sweetness of the Hawaiian rolls perfectly balances the robust, tangy character of the pot roast and pepperoncini, creating a truly irresistible experience with every bite. It’s a combination that truly captures the heart!

Ingredient Spotlight: Tips & Substitutions
Understanding your ingredients is key to making these sliders perfect every time. Here’s a deeper dive into the components:
- ROAST – The heart of this recipe! You’ll need a delicious batch of Mississippi Pot Roast. We recommend using our recipes for either the slow cooker Mississippi pot roast, which is fantastic for developing deep flavors over time and great for make-ahead meals, or our Instant Pot Mississippi pot roast, ideal when you need a quicker method or are hosting and want perfectly tender meat in less time. Regardless of the cooking method, ensure your pot roast is shredded and drained of excess liquid before assembling the sliders to prevent them from becoming soggy.
- CHEESE – We specifically chose deli-sliced provolone for its excellent melt and mild, slightly tangy flavor that complements the robust pot roast without overpowering it. However, feel free to experiment with other great melting cheeses. Swiss cheese offers a nutty, slightly sweet profile, muenster cheese melts beautifully and has a buttery taste, Havarti provides a creamy texture, mozzarella delivers a classic stretchy melt, and pepper jack adds a delightful kick of spice for those who enjoy a bit of heat.
- BREAD – Sweet Hawaiian rolls are an absolute game-changer for these sliders. Their distinctive sweetness provides a wonderful contrast to the savory and tangy flavors of the meat and peppers, while their soft, pillowy texture holds everything together perfectly. You can truly elevate this dish by making homemade Hawaiian rolls, or for convenience, readily available prepackaged rolls from your local grocery store work just as well. If Hawaiian rolls aren’t your preference or available, any soft dinner roll or slider bun will work, though the flavor profile will differ slightly.
- PEPPERONCINI – These pickled peppers are crucial for that signature Mississippi tang and a subtle heat. Sliced pepperoncini are easiest to work with for even distribution. If you can’t find them, sliced banana peppers offer a similar vinegary tang, though they are typically milder.
- BUTTER & GARLIC SALT – This simple topping creates a golden, savory crust on the rolls, adding another layer of irresistible flavor and texture. Unsalted butter is preferred so you can control the saltiness with the garlic salt.

- Prepare the Pot Roast: Begin by cooking your Mississippi Pot Roast to tender perfection, either in your Instant Pot for a quicker result or in a crockpot for a slow-cooked, deeply flavored meal. Once cooked, shred the roast with two forks until it’s easily pull-apart. It’s crucial to drain any excess liquid from the shredded meat to prevent the sliders from becoming soggy during baking. Set the warm, shredded pot roast aside.
- Preheat Oven: Preheat your oven to 375°F (190°C). This ensures your sliders will bake evenly and develop that perfect golden crust.
- Slice the Rolls: Using a sharp bread knife, carefully slice the entire block of Hawaiian rolls horizontally in half. You want to separate the top half from the bottom half, keeping the individual rolls connected for easier assembly.
- Arrange Rolls in Pan: Place the bottom half of the sliced rolls into a 13×9 baking dish. They should fit snugly, forming an even layer across the bottom of the pan.
- Add the Cheese: Carefully layer the provolone cheese slices evenly over the bottom layer of rolls. The cheese will melt beautifully, creating a delicious barrier and binding the flavors.
- Pile on the Roast: Generously pile the shredded Mississippi pot roast on top of the cheese layer. Spread it out as evenly as possible to ensure every slider gets a good amount of meat.
- Add Pepperoncini: Liberally sprinkle the sliced pepperoncini peppers over the beef. These peppers provide the essential tangy kick that defines the Mississippi pot roast flavor profile.
- Cover with Tops: Gently place the top layer of the Hawaiian rolls back over the filling, aligning them carefully with the bottom halves.
- Butter & Garlic Salt Topping: In a small bowl, melt the unsalted butter. Stir in the garlic salt until well combined. Using a pastry brush, generously coat the tops of the rolls with this savory garlic butter mixture. This step is essential for achieving a golden, slightly crispy, and incredibly flavorful top crust. You may not need to use all of the butter mixture, so just brush until the tops are well-covered.
- Bake to Perfection: Cover the baking pan tightly with aluminum foil. Bake in the preheated oven for 15 minutes. This initial covered baking allows the cheese to melt thoroughly and the flavors to meld without the rolls browning too quickly. After 15 minutes, remove the foil and continue to bake for another 5 minutes, or until the tops of the rolls are lightly golden brown and the cheese is bubbly and fully melted.
- Slice and Serve: Once baked, carefully remove the pan from the oven. Using two large spatulas or fish turners, gently lift the entire block of sliders out of the pan and transfer it to a cutting board. With a sharp Chef’s knife or serrated bread knife, cut along the lines of the rolls to separate them into individual sliders.
- Enjoy Warm! Serve these delicious Mississippi Pot Roast Sliders immediately while they are warm and the cheese is still wonderfully gooey.
Frequently Asked Questions & Expert Tips for Success
Absolutely! These sliders are a fantastic make-ahead option, perfect for entertaining or meal prep. Follow all the assembly steps, including adding the foil to the pan. Once assembled, store the tightly covered pan in the refrigerator for up to 3 days. Before baking, remove the pan from the fridge and allow it to come to room temperature for about 30-40 minutes. This ensures even heating and prevents the rolls from getting soggy. Then, bake as directed.
Store any leftover sliders in an airtight container in the refrigerator for up to 4 days. To reheat, you can place them back in the oven at 300°F (150°C) for about 10-15 minutes, or until warmed through and the cheese is re-melted. You can also microwave them for quicker reheating, though the rolls might not be as crispy. For best results, cover them loosely with foil when reheating in the oven to prevent drying out.
There are a few tricks! First, ensure your shredded pot roast is thoroughly drained of excess liquid. You want the flavorful meat, not the watery juices. Second, lightly toasting the bottom halves of your Hawaiian rolls before assembly can create a slight barrier. Simply pop them in the oven for 3-5 minutes at 350°F before adding the fillings. Lastly, avoiding over-baking is key – the goal is melted cheese and warm ingredients, not prolonged exposure to moisture.
Yes, you absolutely can! If you’re short on time, using pre-cooked, shredded pot roast (like those found in the deli section or pre-made meal kits) is a great shortcut. Just be sure to season it well to mimic the flavors of traditional Mississippi pot roast. You might want to add a dash of au jus gravy mix, ranch seasoning, and a splash of pepperoncini juice to the store-bought meat to infuse it with that signature tang and savory depth.

Delicious Serving Suggestions for Your Sliders
Mississippi Pot Roast Sliders are incredibly versatile, making them the perfect party food for almost any occasion, whether it’s a casual football game gathering, a festive potluck, or a comforting family dinner. These savory bites are robust enough to stand on their own, but pairing them with the right sides can elevate your meal even further.
For a hearty dinner, these sliders pair wonderfully with classic comfort foods like creamy au gratin potatoes, fluffy mashed potatoes, or a rich mac and cheese. If you’re looking for something lighter to complement the rich sliders, consider roasted vegetables like tender roasted broccoli, sweet roasted carrots, or a crisp, fresh dinner salad with a tangy vinaigrette.
When serving for potlucks or larger crowds, aim for sides that are easy to share and transport. Classic options include crunchy potato chips, a refreshing pasta salad, a creamy potato salad, or a vibrant tray of fresh veggies with a delicious dip. These sliders also make a fantastic addition to a broader appetizer spread, alongside other finger foods.

Before You Begin
- This recipe will make 24 sliders from a full recipe of our Mississippi pot roast in either the Instant Pot or crockpot. One serving typically equals 3 sliders. Please note that the nutrition facts provided below do NOT include the meat from the pot roast itself, only the additional ingredients for the sliders.
- If you prefer individual sliders that are easier to pull apart without cutting after baking, you can reduce the number of rolls to 18 and separate each one before adding them to the pan. This method may require you to adjust the amount of cheese and potentially cut the cheese slices to fit each roll. While the rolls won’t be as tightly packed, this allows for effortless removal of individual sliders from the pan post-baking.
- These sliders are excellent for making ahead of time. Follow all steps up to and including covering the pan with foil. Store the assembled, tightly covered pan in the refrigerator for up to 3 days. Before baking, take the pan out of the fridge and allow it to sit at room temperature for approximately 30-40 minutes to ensure even baking.
- Store any leftover sliders in an airtight container in the refrigerator for up to 4 days. Reheat gently in the oven or microwave.
- While we used deli-sliced provolone for its perfect melt and complementary flavor, you have several delicious options for substitution: Swiss, Muenster, Havarti, mozzarella, or pepper jack cheese would all be great choices, each offering a slightly different flavor and melt profile.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
