Instructions

  • In a large bowl, sift together the flour, baking powder, and salt. Add the room temperature unsalted butter. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture resembles coarse, loose crumbs. This step is crucial for achieving tender tortillas.

  • Place the kneaded dough into a lightly greased bowl. Cover the bowl tightly with plastic wrap and let the dough rest at room temperature for 30 to 60 minutes. This resting period allows the gluten to relax, making the dough easier to roll and resulting in a more tender tortilla.
  • After resting, divide the dough ball into 16 equal pieces. Roll each piece into a small ball. On a lightly floured surface, or using a tortilla press, flatten each dough ball into a round tortilla, aiming for a diameter of 6 to 8 inches and a uniform thickness.
  • Heat a flat-bottomed pan (like a cast iron skillet or a non-stick pan) over medium-high heat. Once hot, place a rolled tortilla in the dry pan. Cook for about 1 to 2 minutes per side. The first side is ready to flip when small bubbles form on the surface and the bottom has developed light tan spots. Flip and cook the second side for another minute or until similar spots appear. Adjust the heat as needed to prevent burning and ensure even cooking.
  • As each tortilla finishes cooking, immediately transfer it to a clean kitchen towel. Wrap the cooked tortillas snugly in the towel to keep them warm, soft, and pliable while you finish cooking the remaining dough. Serve immediately or store for later enjoyment.
