Delicious Leftover Chicken Salad Recipe for Quick and Easy Meals

Recently, I grilled some chicken and ended up with extra boneless chicken breasts. To avoid wasting them, I stored the leftovers in the fridge. The next day, I quickly made a flavorful leftover chicken salad that was perfect for lunch. This easy chicken salad is not only delicious but also versatile – it tastes amazing served open-faced on toast or stuffed inside a pita pocket.

To add a delightful crunch and a touch of natural sweetness, I mixed in some yellow delicious apple. For the dressing, I combined mayonnaise and ranch dressing, adding a bit of minced red onion for extra flavor. This combination was perfect with the ingredients I had on hand, but feel free to customize the dressing to your taste preferences.

Ingredients



  • 10 ounces chicken breasts cubed – about 2 breasts



  • .15 pound yellow delicious apple sliced then chopped



  • 2 ½ tablespoons mayonnaise



  • 2 tablespoons ranch dressing



  • 1 tablespoon minced red onion



  • 1 tablespoon minced fresh Italian flat leaf parsley

Instructions

  • Mix all ingredients together well with a spoon. Serve the chicken salad over fresh lettuce, on crackers, or inside a pita pocket for a satisfying meal.
