Ingredient Spotlight & Smart Substitutions
Let’s dive deeper into the core components of these zucchini sliders and explore ways to customize them to your liking:
ZUCCHINI: The Low-Carb “Bun”
The star of the show! You’ll need one extra-large zucchini to yield approximately 16 half-inch thick slices. This thickness is crucial as it ensures the zucchini rounds are sturdy enough to hold the burger patties without falling apart, yet tender enough to bite through easily. If a single extra-large zucchini is hard to find, don’t worry – two to three medium-sized zucchinis will work perfectly. When selecting your zucchini, look for firm, bright green specimens that feel heavy for their size, indicating freshness and good water content. Avoid any with soft spots, wrinkles, or blemishes. A gentle pat dry with a paper towel after slicing is important to remove excess moisture, which helps the zucchini brown beautifully in the skillet and prevents a soggy slider.
GROUND BEEF: The Hearty Core
For the patties, we recommend using lean ground beef, ideally around 90/10 (90% lean, 10% fat). This ratio provides a good balance of flavor and prevents the sliders from becoming too greasy. If you prefer a slightly richer patty, an 80/20 ratio can also be used. For a lighter option, ground turkey or even ground chicken can be excellent substitutes, offering a different flavor profile while maintaining the low-carb nature of the dish. Seasoning is key here: a simple sprinkle of salt and freshly ground black pepper is often enough to bring out the beef’s natural flavor, but feel free to elevate it with your favorite burger seasoning blend, a pinch of garlic powder, onion powder, or a dash of smoked paprika for extra depth.
CHEESE: The Melty Goodness
Pre-sliced cheddar cheese is a classic choice for a reason – it melts beautifully and offers a familiar, savory flavor that complements beef perfectly. You’ll need to quarter the slices to fit the smaller slider patties. However, don’t hesitate to experiment with other cheeses! Swiss cheese adds a nutty, mild flavor; American cheese offers ultimate meltiness; and Pepper Jack cheese can introduce a pleasant spicy kick. If you’re feeling adventurous, consider finely shredding a small amount of cheese and mixing it directly into the ground beef mixture before forming the patties. This adds an extra layer of flavor and moisture throughout the burger. Remember to choose a cheese that melts well for that satisfying gooey factor.
Other Essentials: Don’t forget a good quality cooking spray, such as avocado oil spray, for greasing your skillet and preventing sticking. This ensures your zucchini and burger patties cook evenly and develop a nice crust.
Crafting Your Zucchini Sliders: A Step-by-Step Guide
These step-by-step photos and detailed instructions are designed to help you visualize each stage of making this delicious recipe. For a convenient printable version, complete with all measurements and a quick-reference summary, simply jump to the recipe card at the bottom of this post.
- Prepare the Zucchini “Buns”: Begin by carefully slicing your chosen zucchini into rounds that are approximately 1/2 inch thick. Precision here helps ensure even cooking and a stable base for your sliders. If the zucchini rounds appear watery, gently pat them dry with a paper towel. This step is crucial, as excess moisture can lead to steaming instead of browning, and nobody wants a soggy zucchini slider! Once dried, season both sides of the zucchini rounds generously with salt and pepper to taste. Set them aside on a paper towel-lined plate while you prepare the patties.
- Form the Burger Patties: In a medium mixing bowl, combine the lean ground beef. Add salt and pepper, or your preferred burger seasoning, to taste. Use your hands to gently mix the seasoning into the meat until just combined. Overmixing can lead to tough patties. Divide the seasoned ground beef into 8 small portions, each about 1 to 2 inches wide, and carefully shape each portion into a small, flat burger patty. Aim for a thickness that will cook relatively quickly and fit well between your zucchini rounds.
- Cook the Zucchini: Heat a large skillet over medium-high heat. Lightly grease the skillet with cooking spray. Once hot, place the zucchini rounds in a single layer, ensuring not to overcrowd the pan. Cook for 2-3 minutes per side, or until they are beautifully browned with a light, slightly crispy crust. You want them tender-crisp, not mushy. Remove the cooked zucchini from the skillet and set them aside on a plate.
- Cook the Burger Patties: Using the same skillet (no need to clean it!), place the small burger patties in a single layer. Cook for 2-3 minutes on one side until nicely browned. Flip the patties, and immediately place a quartered slice of cheddar cheese on top of each one. Continue to cook for another 2-3 minutes, or until the cheese is melted and bubbly, and the patties reach your desired level of doneness. For medium-rare, aim for an internal temperature of 130-135°F (54-57°C); for medium, 140-145°F (60-63°C); and for well-done, 160°F (71°C) or higher.
EXPERT TIP: Resist the urge to press down on your burger patties with a spatula while they are cooking. This common mistake squeezes out flavorful juices and precious fat, resulting in dry, less flavorful burgers. Let them cook undisturbed to lock in all that deliciousness!
- Rest the Patties: Once cooked, remove the cheesy burger patties from the skillet and transfer them to a clean plate. Allow them to rest for 3-5 minutes. This crucial resting period allows the juices to redistribute throughout the meat, ensuring a more tender and juicy bite.
- Assemble Your Zucchini Sliders: It’s time to build! Take one cooked zucchini round and place it on the bottom. Top it with a cheesy burger patty, then crown it with another zucchini round. For extra stability, especially if you’re adding additional toppings, insert a cocktail pick or a decorative toothpick through the center of each slider to hold all the layers together.
- Serve and Enjoy!: Your low-carb zucchini sliders are now ready to be savored! Serve them warm and watch them disappear.

Frequently Asked Questions & More Expert Tips
Think of these zucchini sliders as mini, bun-less burgers, opening up a world of topping possibilities! You can transform them into gourmet bites with a variety of condiments and fresh ingredients. Consider classic burger sauces, tangy barbeque sauce, a dollop of ketchup or mustard, or even a spicy sriracha mayo for a kick. For fresh additions, thinly sliced tomatoes, crisp lettuce leaves (like butter lettuce or romaine hearts), crunchy pickle rounds, or even a slice of red onion can add texture and zing. For an elevated touch, try caramelized onions, sautéed mushrooms, or a sprinkle of fresh herbs like chives or parsley.
Absolutely! You can prepare the components of these sliders in advance. Cook and store the zucchini rounds and burger patties separately in airtight containers in the refrigerator for up to 3-4 days. This makes assembly quick and easy when you’re ready to eat. Reheat the patties and zucchini gently in a skillet or microwave, then assemble just before serving to maintain freshness and texture.
If you have assembled sliders left over, it’s best to store them unassembled to prevent the zucchini from becoming too soft. Keep the cooked zucchini rounds and burger patties in separate airtight containers in the refrigerator for up to 3 days. This helps maintain the best texture for both components.
While zucchini works wonderfully as a low-carb bun, you can certainly experiment with other vegetables. Large slices of bell pepper (especially bell peppers cut horizontally to form rounds), thick-cut eggplant slices, or even portobello mushroom caps can serve as excellent bun alternatives. Adjust cooking times as needed for different vegetables to ensure they are tender but still hold their shape.
To make these zucchini sliders vegetarian, simply substitute the ground beef patties with your favorite plant-based burger patties. Many excellent vegetarian and vegan burger options are available in stores, or you can make your own black bean, mushroom, or lentil patties from scratch. Ensure your cheese choice is also vegetarian or vegan if desired.
Zucchini naturally holds a lot of water. After slicing, make sure to thoroughly pat the zucchini rounds dry with paper towels. You can even place them on a rack and sprinkle them lightly with salt for 10-15 minutes, which draws out even more moisture. Pat them dry again before cooking. This extra step guarantees beautifully browned, tender-crisp zucchini and prevents your sliders from becoming watery.
The goal for the zucchini rounds is to be tender with a slight char and crispness, not mushy. Cook them just until browned on both sides. Overcooking will make them too soft and difficult to handle as a “bun.”

Creative Serving Suggestions for Your Zucchini Sliders
These versatile zucchini sliders are incredibly adaptable and can be served in a multitude of ways to suit any occasion or craving. They are an absolute crowd-pleaser for lively football parties, casual game nights, festive backyard barbecues, or simply as a satisfying, healthy meal during the week. - Classic Toppings: Offer a build-your-own slider bar with bowls of sliced cherry tomatoes, crisp lettuce, dill pickle rounds, and finely chopped red onion.
- Sauce It Up: Provide a selection of condiments like sugar-free ketchup, mustard, a homemade “secret sauce” (mayo, ketchup, relish), ranch dressing, or a spicy aioli.
- Add a Fresh Element: Garnish with fresh herbs such as chopped chives, parsley, or cilantro for a burst of color and freshness. A squeeze of fresh lemon juice before serving can also brighten the flavors.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
