Ingredients

  • 1 teaspoon allspice
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon ground cloves
  • 3 pound beef bottom round roast
  • 2 tablespoons olive oil
  • ½ cup brandy
  • ½ cup beef broth
  • ½ cup brewed coffee
  • 1 teaspoon minced garlic about 2 cloves
  • 2 bay leaves
  • ½ cup packed dark brown sugar
  • ¼ cup fresh lime juice

Instructions

  • Combine allspice, salt, pepper and cloves in a small bowl. Rub spice mixture all over the roast.
  • Heat olive oil in a skillet and sear roast on all sides until well browned.
  • While roast is browning, combine brandy, broth and coffee. Reserve 1/2 cup of this broth mixture and set aside. Add garlic and bay leaves to the remaining broth mixture.
  • Remove roast from skillet and place it in the slow cooker. Carefully remove any excess oil from the skillet, then return the skillet to the stove. Add the broth/garlic mixture to the skillet, scraping up any delicious brown bits from the bottom of the pan. Heat the mixture to a gentle boil, then reduce heat to low and simmer for 3-5 minutes. Pour this heated mixture over the roast in the slow cooker.
  • To the reserved 1/2 cup broth mixture, add the dark brown sugar and fresh lime juice. Stir well to combine. Pour this sweet and tangy mixture over the roast in the slow cooker.
  • Cover the slow cooker and cook on low for 4-6 hours, or until the roast is incredibly tender and easily pulls apart with a fork.
  • Once cooked, carefully remove the roast from the slow cooker and transfer it to a cutting board. Tent it loosely with foil and allow it to rest for ten minutes before slicing. This resting period helps the juices redistribute, resulting in a more tender and moist roast. Before serving, remember to remove the bay leaves, then slice the beef against the grain and generously spoon the rich brandy sauce over the slices.
