Why This Instant Pot Beef Shanks Recipe Will Become Your New Favorite

Cooking beef shanks traditionally involves a long and patient process, often requiring several hours of braising to achieve that desirable fork-tender texture. While classic braised beef shanks are undoubtedly delicious, modern life sometimes calls for a quicker, yet equally satisfying solution. This is where your trusty Instant Pot truly shines, revolutionizing the way we prepare this robust cut of meat.

The Instant Pot transforms the entire cooking experience for beef shanks. Its pressure cooking function drastically cuts down on cooking time, allowing you to achieve fall-off-the-bone tenderness in a fraction of the time compared to stovetop or oven methods. No longer do you need to plan your meal an entire day in advance. With the Instant Pot, you can have a deeply flavorful, incredibly tender beef shank dinner on the table in about an hour and a half, making it perfect for weeknight meals or when you’re simply short on time but refuse to compromise on quality.

Beyond speed, the Instant Pot excels at infusing flavors. The sealed environment forces moisture and aromatics deep into the meat, resulting in a more intensely flavored and succulent dish. The collagen-rich beef shanks, with their prized bone marrow, break down beautifully under pressure, releasing all their savory goodness into the surrounding liquid. This creates an unbelievably rich and unctuous gravy that coats every piece of beef, making each bite an explosion of flavor.

This recipe ensures you get all the benefits of slow-cooked beef shanks – the luxurious texture, the profound beefy flavor, and the wholesome comfort – without the lengthy wait. It’s a testament to how modern kitchen appliances can enhance traditional recipes, delivering gourmet results with remarkable ease. If you love your Instant Pot as much as I do, you’ll be thrilled with how effortlessly it handles this tougher cut, turning it into a culinary masterpiece.

Ingredient Spotlight: Tips & Swaps for Your Beef Shanks

Beef Shanks

BEEF – Beef shanks are the unsung heroes of hearty stews and braises. This cut, typically from the leg, is rich in bone marrow and connective tissue (collagen). When cooked under pressure, the collagen breaks down into gelatin, which not only tenderizes the meat but also enriches the gravy with a silky, unctuous texture and immense flavor. The bone marrow itself melts into the sauce, adding a deeply savory, umami note that’s hard to replicate. When selecting beef shanks, look for pieces with a good amount of meat and visible bone marrow in the center.

Red Wine

WINE – A dry red wine is paramount in this recipe, serving multiple purposes beyond just flavor. Its acidity helps to tenderize the beef further, breaking down tough fibers while infusing the meat with a complex, fruity, and slightly tannic character. Pinot Noir, Cabernet Sauvignon, or Zinfandel are excellent choices, offering robust profiles that stand up well to the richness of the beef. If you prefer not to cook with alcohol, you can substitute the red wine with an equal amount of beef broth or stock, perhaps with a splash of red wine vinegar or balsamic vinegar to replicate some of the acidity and depth.

Fresh Vegetables

VEGETABLES – Our recipe calls for a classic aromatic base of carrots, onions, and garlic, which provide essential sweetness and pungency. Sliced mushrooms are added later, contributing an earthy umami flavor and a wonderful textural contrast. Feel free to incorporate other root vegetables like celery, parsnips, or potatoes (added closer to the end of cooking to prevent them from becoming mushy). Bell peppers or leeks could also be delicious additions, offering different flavor dimensions to your Instant Pot beef shanks.

Flavor Enhancers & Liquids

ADDITIONS – To deepen the umami profile, we incorporate soy sauce and Worcestershire sauce. Both are powerhouses of savory flavor and help to create a well-rounded gravy. For the liquid base, we prefer using a concentrated bouillon base, such as “Better Than Bouillon,” for its convenience, intense flavor, and space-saving qualities. It’s easily reconstituted with water, providing a rich beef broth on demand. However, you can absolutely use high-quality beef broth or stock instead. Tomato paste is another key ingredient, adding a concentrated, slightly sweet, and tangy depth that rounds out the sauce beautifully. Don’t forget the garlic salt, onion powder, and smoked paprika, which provide foundational savory, aromatic, and smoky notes.

  1. Prepare the Instant Pot: Add 2 tablespoons of olive oil to your Instant Pot. Select the “Saute” function and allow it to heat up until the oil shimmers. This initial browning step is crucial for developing deep, rich flavors.
  2. Season the Beef: Season your beef shanks generously on both sides using 1/2 tablespoon of garlic salt and 1 teaspoon of black pepper. Don’t be shy with the seasoning; this forms the foundation of the beef’s flavor.
  3. Sear the Shanks: Carefully place one beef shank at a time into the hot Instant Pot. Sear each side until it develops a deep, golden-brown crust. This browning caramelizes the meat’s surface, locking in juices and adding significant depth to the final dish. Remove the browned shanks from the Instant Pot and set them aside on a plate. Repeat with remaining shanks if necessary, avoiding overcrowding the pot.
  4. Beef shank browning in the Instant Pot, developing a flavorful crust.

  5. Build the Gravy Base: Deglaze the Instant Pot with a splash of red wine, scraping up any browned bits from the bottom – these are packed with flavor! Then, add the red wine, minced garlic, chopped carrots, chopped onions, onion powder, smoked paprika, low sodium soy sauce, Worcestershire sauce, beef base, tomato paste, and the remaining 1/2 tablespoon of garlic salt and 1 teaspoon of black pepper. Stir well to combine all these aromatic ingredients.
  6. A mix of vegetables and seasonings, including red wine, garlic, carrots, and onions, being added to the Instant Pot.

  7. Add Liquid and Beef: Pour in 3 cups of water and stir the mixture thoroughly. Return the browned beef shanks to the pot, nestling them gently into the liquid. Ensure the shanks are mostly submerged; if not, add a little more water or beef broth until they are adequately covered for even cooking under pressure.
  8. Pouring water into the Instant Pot over beef shanks and vegetables, preparing for pressure cooking.

  9. Add Herbs & Mushrooms: Top the beef and liquid with fresh rosemary sprigs and the sliced mushrooms. The rosemary will infuse its fragrant, piney notes throughout the dish, while the mushrooms will cook down and add their savory essence to the gravy.
  10. Sliced mushrooms and fresh rosemary sprigs added to beef shanks and vegetables in the Instant Pot.

  11. Pressure Cook: Secure the lid on your Instant Pot and turn the vent to the sealed (closed) position. Select the “Pressure Cook” or “Manual” function and set it to high pressure for 45 minutes. Once the cooking cycle is complete, allow a 5-minute natural pressure release. This crucial step helps keep the meat tender and juicy. After 5 minutes, carefully open the vent to release any remaining pressure. Your Instant Pot beef shanks are now ready to be served!

Frequently Asked Questions & Expert Tips for Instant Pot Beef Shanks

Mastering Instant Pot Beef Shanks is easy with these helpful tips and answers to common questions. Get the most out of your recipe and ensure perfect results every time!

How do you store leftover Instant Pot beef shanks?

Any cooled leftovers should be stored in an airtight container and kept in the refrigerator for up to 4 days. The flavors often deepen overnight, making them even more delicious the next day!

Can I make beef shanks on the stovetop or in a slow cooker?

Absolutely! While the Instant Pot offers speed, you can certainly achieve similar tender results with traditional methods. For a stovetop approach, I highly recommend checking out our braised beef shanks recipe, which outlines the low-and-slow technique beautifully. If you prefer a slow cooker, sear the shanks as directed, then transfer all ingredients to a slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until fork-tender.

Can I thicken the gravy from my Instant Pot beef shanks?

The gravy in this recipe typically has a thinner, au jus-like consistency, perfect for soaking into mashed potatoes or polenta. However, if you prefer a thicker gravy, it’s very easy to achieve. Once the beef shanks are cooked, carefully remove them and the rosemary sprigs from the Instant Pot, leaving only the liquid. Create a cornstarch slurry by whisking 1-2 tablespoons of cornstarch with an equal amount of cold water until smooth. With the Instant Pot on the “Sauté” function, gradually whisk the slurry into the hot liquid. Simmer, stirring constantly, until the gravy thickens to your desired consistency. This method can also be done in a saucepan on the stovetop. Use as much or as little of the liquid as desired, adjusting seasoning if needed.

What size Instant Pot is best for this recipe?

This recipe is designed for a standard 6-quart or 8-quart Instant Pot. A 6-quart model will comfortably fit two pounds of beef shanks, while an 8-quart will offer a bit more room, especially if you plan to double the recipe or add more vegetables. Ensure your shanks fit in a single layer for optimal browning during the initial sauté step.

I don’t cook with wine. What can I use instead?

If you prefer to avoid alcohol, you can substitute the dry red wine with an equal amount of beef broth or stock. To replicate some of the wine’s acidity and depth, you can add a tablespoon of red wine vinegar or balsamic vinegar along with the broth. The flavors will still be wonderfully rich and savory.

Can I freeze Instant Pot beef shanks?

Yes, these beef shanks freeze beautifully! Once cooled completely, transfer the beef shanks and gravy to freezer-safe containers or heavy-duty freezer bags. They can be stored in the freezer for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave, adding a splash of broth if needed to restore consistency.

Delicious Serving Suggestions for Your Beef Shanks

These Instant Pot Beef Shanks are a meal in themselves, but they truly shine when paired with the right accompaniments that can soak up every last drop of that incredible red wine gravy. The rich, savory flavors of the beef demand a side that offers both comfort and balance.

Consider serving your tender beef shanks over a generous bed of creamy risotto, providing a luxurious and absorbent base. Alternatively, classic mashed potatoes are always a crowd-pleaser, their fluffy texture and mild flavor making them the perfect canvas for the savory gravy. Polenta, with its slightly coarser texture and subtle corn flavor, offers another fantastic option. For a lighter touch, rice, couscous, or even a hearty artisanal bread can work wonders.

To complete your gourmet meal, pair the dish with a crisp, refreshing green salad. A simple vinaigrette dressing will cut through the richness of the beef, offering a pleasant counterpoint. A side of steamed green beans, roasted asparagus, or glazed carrots can also add a vibrant touch and extra vegetables to your plate. Enjoy this hearty and comforting meal with your loved ones!

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
