Ingredients

  • 10 ounces regular or vanilla graham crackers 2 5-ounce packages – finely ground using a food processor or manually crushing
  • 6 tablespoons unsalted butter melted and cooled *I give a range for the amount because I have found that depending on the humidity, you may need more or less butter
  • 16 ounces cream cheese 2 8-ounce packages – softened to room temperature
  • 1 cup granulated white sugar
  • 1.5 tablespoons apple cider vinegar or fresh squeezed lemon juice
  • 6.8 ounce Jello instant pumpkin spice pudding mix 2 3.4-ounce packages
  • 3 cups milk
  • 8 ounces Cool Whip
  • ¼ cup pecans or walnuts toasted & chopped- to toast nuts: spread chopped nuts over a foil-lined sheet, toast in 350 degree oven for 1-2 mins, keep an eye on them so they don’t burn)
  • halved pecans to garnish optional
  • drizzle of caramel sauce

Before You Begin

I suggest using an offset spatula for spreading the layers and make sure it’s clean before starting a new layer. This helps achieve those beautiful, distinct layers.

After refrigerating, for serving to show more defined layers, you can just take a butter knife and “wipe” along the sides of the pan before cutting, and the layers will show nicely.

You can freeze the Pumpkin Lasagna overnight (at least 6 hours) to get more defined slices. When serving, make sure you use a sharp knife to cut down through the bottom crust first before removing slices with a spatula. It will defrost fairly quickly depending on the room temperature, making for elegant, easy-to-serve portions. Do not freeze if you substitute homemade whipped cream, as it may not hold up as well as frozen whipped topping like Cool Whip.

  • 1st Layer – Bottom Graham Cracker Crust: In a medium-large bowl, thoroughly mix the melted and cooled unsalted butter with the finely ground graham crackers. Press this mixture firmly and evenly into the bottom of a 9 x 13-inch pan. Cover the pan and chill in the refrigerator while you prepare the next layer.
  • 2nd Layer – Cream Cheese Layer: Using a hand electric mixer, combine the softened cream cheese, 1 cup of granulated sugar, and 1-2 tablespoons of apple cider vinegar (or freshly squeezed lemon juice). Beat until the mixture is completely even and smooth. Carefully spread this creamy mixture evenly on top of the chilled graham cracker crust.
  • 3rd Layer – Pumpkin Spice Pudding Layer: In a separate large mixing bowl, whisk together the milk and the instant pumpkin spice pudding mix until the pudding begins to set and thicken. This may take about 4-5 minutes. Once thickened, gently spread this pumpkin pudding layer evenly over the cream cheese mixture.
  • 4th Layer – Whipped Topping & Garnish: Using an offset spatula, spread the thawed whipped topping evenly over the pumpkin spice pudding layer. Sprinkle with the shaved bittersweet chocolate and the toasted, chopped pecans. For serving, drizzle generously with caramel sauce.
