Ingredients

  • 1 lb lean ground turkey
  • 1 tbsp oil
  • 1 small onion chopped
  • 12 large eggs lightly beaten
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 tsp Italian Herbs
  • 1 package 16 ounces frozen shredded hash brown potatoes, thawed
  • 1 cup 4 ounces 2% shredded cheddar cheese

Instructions

  • Heat oil in a large skillet and add the chopped onion and saute for a couple of minutes.
  • Then add the ground turkey and sprinkle on the Italian herbs and cook on a medium – high heat for 3-4 minutes, stirring frequently. Break up the turkey into crumbles as it cooks.
  • In a separate large bowl, whisk together eggs with the salt and pepper until well combined and slightly frothy.
  • Stir in the thawed hash browns, half of the shredded cheese, and the cooked onion and turkey mixture to the bowl with the eggs. Mix gently until all ingredients are evenly distributed.
  • Transfer the entire mixture to a greased 13×9-in. baking dish. Sprinkle the remaining cheese evenly over the top.
  • Bake, uncovered, in a preheated oven at 350°F (175°C) for 35-45 minutes or until the casserole is set and a knife inserted near the center comes out clean. The top should be golden brown and bubbly. Let it rest for a few minutes before serving.
