In a medium bowl, whisk together soy sauce, sesame oil, oyster sauce, honey, rice vinegar, ginger, garlic, and brown sugar to create your homemade teriyaki sauce. Set the sauce aside.

Chop the boneless, skinless chicken breasts into uniform bite-sized chunks.

Heat the olive oil in a wok or large skillet over medium-high heat until it shimmers.

Add the chopped chicken to the wok and sprinkle with garlic salt. Stir-fry until no pink remains in the chicken.

Pour the prepared teriyaki sauce into the wok with the cooked chicken, stirring to coat.

In a small bowl, whisk the cornstarch into the water until smooth, then add this slurry to the sauce in the skillet.

Bring the mixture to a boil, stirring occasionally, and cook for 3-4 minutes to allow the sauce to thicken into a glossy glaze.
